Baked Eggplant Fries

Ingredients:
- 1 eggplant
- 3 eggs, lightly beaten
- 1 cup almond flour
- 1 cup cheddar cheese, shredded
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
Instructions:
- Preheat the oven to 425 degrees.
- Line a baking sheet with parchment paper.
- Cut the eggplant in half, length wise, and cut into 2-3 inch fries. Set aside.
- Lightly beat the eggs and place on their own plate.
- Mix almond flour, shredded cheddar cheese, pepper, salt, garlic powder, onion powder and thyme on another plate.
- Take an eggplant fry and dip in egg mixture and then dip in flour mixture. Place on lined baking sheet.
- Continue until all fries are prepared. Add more eggs/flour mixture as needed.
- Bake for 10-15 minutes, or until golden brown.
