Baked Eggplant Fries

Need a new way to use your eggplant? These fries will have you buying eggplant more often. Eggplant is not only rich in dietary fiber, but also thiamin (vitamin B1), pyridoxine (vitamin B6) and potassium.

Baked Eggplant Fries

Ingredients:

  • 1  eggplant 
  • 3 eggs, lightly beaten 
  • 1 cup almond flour 
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder 
  • 1 teaspoon onion powder 
  • 1 teaspoon dried thyme 

Instructions:

  1. Preheat the oven to 425 degrees.
  2. Line a baking sheet with parchment paper. 
  3. Cut the eggplant in half, length wise, and cut into 2-3 inch fries. Set aside. 
  4. Lightly beat the eggs and place on their own plate. 
  5. Mix almond flour, shredded cheddar cheese, pepper, salt, garlic powder, onion powder and thyme on another plate. 
  6. Take an eggplant fry and dip in egg mixture and then dip in flour mixture. Place on lined baking sheet. 
  7. Continue until all fries are prepared. Add more eggs/flour mixture as needed. 
  8. Bake for 10-15 minutes, or until golden brown. 
  9. Enjoy!
