Chocolate Chip Energy Snack Bites

Thanks to flax seeds, hemp hearts and chia seeds, this recipe is rich in alpha-linolenic acid (ALA, an omega-3 fatty acid) and dietary fiber.

Chocolate Chip Energy Snack Bites

Ingredients:

  • 1 cup oats
  • 2 tbsp ground flax seeds
  • 2 tbsp hemp hearts
  • 2 tbsp chia seeds
  • 2 tbsp sunflower seeds
  • 15 unsalted walnuts, roughly chopped
  • 15 unsalted almonds, roughly chopped
  • 1.2 ounces 85% dark chocolate, roughly chopped (can substitute for 1/2 cup chocolate chips) 
  • 1 tbsp cinnamon
  • 1/3 cup peanut butter (or preferred nut butter)
  • 1 tbsp coconut oil, melted
  • 3 tbsp water

Instructions:

How to cook Chocolate Chip Energy Snack Bites

  1. In a bowl, mix together oats, ground flax seeds, hemp hearts, chia seeds, sunflower seeds, chopped walnuts, chopped almonds, chopped dark chocolate and cinnamon.
  2. Once the dry ingredients are mixed, add in peanut butter, melted coconut oil and water. 
  3. Mix well until incorporated. 
  4. Line a baking sheet with parchment paper. 
  5. Roll the dough into balls and place on parchment paper. 
  6. Put the balls in the freezer for 15 minutes. Place the energy balls in a container and keep in the refrigerator.
