Chocolate Chip Energy Snack Bites

Ingredients:
- 1 cup oats
- 2 tbsp ground flax seeds
- 2 tbsp hemp hearts
- 2 tbsp chia seeds
- 2 tbsp sunflower seeds
- 15 unsalted walnuts, roughly chopped
- 15 unsalted almonds, roughly chopped
- 1.2 ounces 85% dark chocolate, roughly chopped (can substitute for 1/2 cup chocolate chips)
- 1 tbsp cinnamon
- 1/3 cup peanut butter (or preferred nut butter)
- 1 tbsp coconut oil, melted
- 3 tbsp water
Instructions:
How to cook Chocolate Chip Energy Snack Bites
- In a bowl, mix together oats, ground flax seeds, hemp hearts, chia seeds, sunflower seeds, chopped walnuts, chopped almonds, chopped dark chocolate and cinnamon.
- Once the dry ingredients are mixed, add in peanut butter, melted coconut oil and water.
- Mix well until incorporated.
- Line a baking sheet with parchment paper.
- Roll the dough into balls and place on parchment paper.
- Put the balls in the freezer for 15 minutes. Place the energy balls in a container and keep in the refrigerator.
