Cocoa Dusted Chocolate Covered Almonds

Chocolate + almonds come together to make one tasty and satisfying snack. During busy times, I love to have little snacks on hand that satisfy my taste buds and keep me going. Store bought chocolate covered almonds are usually full of sugar and processed ingredients. But they are delicious..so why not make them with ingredients you actually know and trust?

These chocolate covered almonds only require three ingredients - almonds, chocolate and cocoa powder. Simple, easy and delicious.

Almonds are nutritious and pack a punch. They are rich in monounsaturated and polyunsaturated fats, protein, magnesium, iron, zinc, vitamin E and more. Research suggests almonds may have a beneficial impact on lowering total cholesterol and LDL cholesterol. Cocoa Dusted Chocolate Covered Almonds

Ingredients

  • 1 cup raw almonds 
  • 1, 85% chocolate bar
  • 1/4 cup unsweetened cocoa powder (for dusting) 
  • Pinch of salt 

Instructions

  1. Preheat the oven to 350 degrees F. 
  2. Add the almonds to a baking sheet and roast for 8-10 minutes, or until they become fragrant. 
  3. Let cool for 10 minutes. 
  4. Meanwhile, on a flat surface, set out a sheet of wax paper for later. 
  5. Break up the chocolate bar into smaller pieces. Put aside 2 small pieces.
  6. In a microwave safe bowl, add the chocolate. Melt the chocolate in increments of 30 seconds - stirring after every 30 seconds. 
  7. Once melted, add in the 2 chocolate pieces you set aside and stir into the chocolate until melted. This will prevent the chocolate from burning. 
  8. In a large bowl, add the almonds. Pour the melted chocolate on top and stir until all almonds are well coated. 
  9. Add the cocoa powder and mix until all almonds are coated. 
  10. Pour the almonds onto your sheet of wax paper and spread them out evenly. 
  11. Sprinkle the almonds lightly with salt. 
  12. Let sit until chocolate hardens. 
  13. Store in a container and keep in the fridge. 
  14. Enjoy!
