Cocoa Dusted Chocolate Covered Almonds

Ingredients
- 1 cup raw almonds
- 1, 85% chocolate bar
- 1/4 cup unsweetened cocoa powder (for dusting)
- Pinch of salt
Instructions
- Preheat the oven to 350 degrees F.
- Add the almonds to a baking sheet and roast for 8-10 minutes, or until they become fragrant.
- Let cool for 10 minutes.
- Meanwhile, on a flat surface, set out a sheet of wax paper for later.
- Break up the chocolate bar into smaller pieces. Put aside 2 small pieces.
- In a microwave safe bowl, add the chocolate. Melt the chocolate in increments of 30 seconds - stirring after every 30 seconds.
- Once melted, add in the 2 chocolate pieces you set aside and stir into the chocolate until melted. This will prevent the chocolate from burning.
- In a large bowl, add the almonds. Pour the melted chocolate on top and stir until all almonds are well coated.
- Add the cocoa powder and mix until all almonds are coated.
- Pour the almonds onto your sheet of wax paper and spread them out evenly.
- Sprinkle the almonds lightly with salt.
- Let sit until chocolate hardens.
- Store in a container and keep in the fridge.
