Cucumber Lemon Hydrator

Cucumber juice is an inexpensive and wonderful liquid to add to your life, especially during the summer. Cucumbers are mostly water and are excellent hydrators.

Cucumber juice is easy to make and is a nice switch up from water, plus it has added nutritional benefits. Cucumbers are rich in silicon, potassium, phosphorus, folate, choline, vitamin A and vitamin K.

Cucumbers are an excellent source of silicon. Silicon is a trace mineral that is important for producing connective tissue. Connective tissue is made up of muscles, tendons, ligaments, cartilage and bone. Silicon not only holds the body together but protects tissues and organs in the body. As a result, a silicon deficiency may lead to damaged connective tissue. Thanks to silicon’s role in connective tissue and therefore bone health, research suggests silicon may help to increase/maintain bone mineral density as one ages.

Many nutrients are found in the skin of cucumbers, so it is important to keep the skin on cucumbers when juicing (and eating) for maximum benefits.

Cucumber Lemon Hydrator

Ingredients:

  • 2 medium cucumbers (or 4-5 mini cucumbers) 
  • 1 cup water 
  • Juice of 1/2 a lemon 
  • Ice (optional) 

Instructions:

  1. Wash the cucumbers. 
  2. Once washed, dice the cucumbers and add to a blender - skin and all! If you have a seeded cucumber, don't worry about taking out the seeds. Simply chop and throw the cucumber pieces into the blender!
  3. Add the water and lemon juice and blend until a smooth liquid. 
  4. Over a glass, pour the mixture into a fine mesh strainer to separate the juice and solids. 
  5. Add ice and enjoy!
