Delectable Leftover Thanksgiving Hand Pies

Ingredients:
Crust
- 1 1/3 cups all purpose flour
- 1 stick (8 tablespoons) unsalted butter, chilled
- 1 teaspoon salt
- 1/4 cup ice water
- 1 egg
Filling for each hand pie
- 1/2 tablespoon leftover mashed potatoes
- 1/2 tablespoon leftover stuffing
- 2-3 small chunks of turkey
- 1/2 tablespoon cranberry sauce
Instructions
Crust
- Preheat the oven to 350 degrees F.
- Cover a baking sheet with aluminum foil.
- In a liquid measuring cup add a few ice cubes and 1/4 cup of water. Set aside.
- In a food processor and/or bowl, mix the flour and salt.
- Cut the chilled butter into cubes and add to the flour mixture.
- Pulse in the food processor, or mix with your fingers, until butter and flour are the size of peas.
- Drain the ice cubes from the water and measure out 1/4 cup of water. Add to the flour mixture.
- Pulse in the food processor until a ball is formed, or mix with your hands until incorporated.
- Flour a clean surface and place the dough down.
- Flour a rolling pin and roll out the dough to 1/4-inch thick.
- Using a 4 1/2 inch circle cutter, cut 9 circles out of the dough. You can use a smaller or bigger cutter as well, just make sure to adjust the filling portions appropriately.
- Evenly place each circle on the baking sheet.
Filling for each hand pie
- Spread the mashed potatoes in the middle of the circle. Leave 1/4-inch border around the circle.
- Add the stuffing on top of the mashed potatoes.
- Add the turkey on top of the stuffing.
- Add a dollop of cranberry sauce on top of the stuffing.
- Repeat with each circle.
- In a small bowl, whisk an egg.
- Using your fingers, or a pastry brush, brush the egg around the perimeter of each circle.
- Fold the circle in half to create a half moon. Lightly press the two sides together.
- Use a fork to press the two sides together even more, creating an even more sealed pie.
- Slit three openings on the top of each pie.
- Brush each pie with egg.
- Clean up any cranberry sauce, or egg mixture, that spilled on the baking sheet.
- Bake at 350 degrees F for 25-30 minutes, or until golden brown.
- Pro Tip: dip in gravy for an even better treat!
