The Perfect Leftover Thanksgiving Frittata

Ingredients:
- 3 tablespoons unsalted butter
- 1/2 red onion, diced
- 1/2 cup leftover green beans, chopped
- 1/2 cup leftover stuffing
- 1/2 cup leftover turkey, diced
- 8 eggs
- 1/2 cup shredded parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees F.
- In an oven proof pan, melt butter.
- Add red onion and cook until translucent, about 10 minutes.
- Add in the green beans, stuffing and turkey. Sauté for 10 minutes. Add salt and pepper to taste.
- In a large bowl, whisk the eggs.
- Off the heat, add the eggs to turkey mixture, spreading evenly.
- Sprinkle the shredded parmesan on top.
- Cook the frittata for 25-30 minutes, or until set.
