A frittata has to be one of the easiest things to whip together, especially when Thanksgiving leftovers are involved. This frittata utilizes a few Thanksgiving leftovers to give it the most perfect flavor profile.

The Perfect Leftover Thanksgiving Frittata

Prep time: 20 MinCook time: 30 MinTotal time: 50 Min

Ingredients:

  • 3 tablespoons unsalted butter 
  • 1/2 red onion, diced 
  • 1/2 cup leftover green beans, chopped  
  • 1/2 cup leftover stuffing
  • 1/2 cup leftover turkey, diced  
  • 8 eggs 
  • 1/2 cup shredded parmesan cheese 
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F. 
  2. In an oven proof pan, melt butter.
  3. Add red onion and cook until translucent, about 10 minutes.
  4. Add in the green beans, stuffing and turkey. Sauté for 10 minutes. Add salt and pepper to taste. 
  5. In a large bowl, whisk the eggs. 
  6. Off the heat, add the eggs to turkey mixture, spreading evenly. 
  7. Sprinkle the shredded parmesan on top. 
  8. Cook the frittata for 25-30 minutes, or until set. 
  9. Enjoy!
