Mini Beet Pizzas

Beet pizza?! Say what?! You heard right. Beets are the star of this dish and give these pizzas a wonderful color and flavor.

Beets make up the crust of this dish and are absolutely delightful. Add your favorite toppings and call it a day! And if you have kids, this is a great way to get them thinking about veggies in a fun way.

Mini Beet Pizzas

Ingredients

  • 1 large beet
  • 1 egg 
  • 1/2 teaspoon garlic salt 
  • 1/2 teaspoon onion powder 
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground oregano 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon pepper 
  • 1/2 teaspoon baking powder
  • 1 cup bread flour (or regular flour) 
  • Extra virgin olive oil 
  • Sprinkle of red pepper flakes (optional) 
  • 4 mini spring form pans (optional) 

Instructions

  1. Preheat the oven to 350 degrees F. 
  2. Line a baking sheet with aluminum foil and place 4 mini spring form pans on top. 
  3. With a cheese grater, or in a food processor, finely grate the beet and then add it to a large bowl. 
  4. In a small bowl, crack and egg and whisk it. Add the whisked egg to the beet mixture. Mix thoroughly. 
  5. In a small bowl, mix garlic salt, onion powder, thyme, oregano, salt, pepper baking powder. 
  6. Add the spice mixture to the beet mixture and mix well. 
  7. Add the bread flour and mix well.  
  8. Split the dough into 4 equal balls. 
  9. Brush the bottom and sides of the spring form pans with olive oil. 
  10. Add a ball of dough to each spring form pan and pan down evenly. 
  11. Place in the oven and pre-bake the crust for 30 minutes. 
  12. After 30 minutes, add your favorite pizza toppings and bake until cheese is golden, about 35-40 minutes. For reference, I added marinara sauce, sautéed onions and mushrooms, and olives and topped with pizza blend cheese. 
  13. When out of the oven, let the pizzas sit for 5 minutes. After 5 minutes, open the spring form part and take out the pizza. 
  14. Cut and enjoy! 
  15. Pro tip: if you don't have mini spring form pans, no worries! You can use one large spring form pan and just make 1 pizza, or use a pan you have.
