Mini Beet Pizzas

Ingredients
- 1 large beet
- 1 egg
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon baking powder
- 1 cup bread flour (or regular flour)
- Extra virgin olive oil
- Sprinkle of red pepper flakes (optional)
- 4 mini spring form pans (optional)
Instructions
- Preheat the oven to 350 degrees F.
- Line a baking sheet with aluminum foil and place 4 mini spring form pans on top.
- With a cheese grater, or in a food processor, finely grate the beet and then add it to a large bowl.
- In a small bowl, crack and egg and whisk it. Add the whisked egg to the beet mixture. Mix thoroughly.
- In a small bowl, mix garlic salt, onion powder, thyme, oregano, salt, pepper baking powder.
- Add the spice mixture to the beet mixture and mix well.
- Add the bread flour and mix well.
- Split the dough into 4 equal balls.
- Brush the bottom and sides of the spring form pans with olive oil.
- Add a ball of dough to each spring form pan and pan down evenly.
- Place in the oven and pre-bake the crust for 30 minutes.
- After 30 minutes, add your favorite pizza toppings and bake until cheese is golden, about 35-40 minutes. For reference, I added marinara sauce, sautéed onions and mushrooms, and olives and topped with pizza blend cheese.
- When out of the oven, let the pizzas sit for 5 minutes. After 5 minutes, open the spring form part and take out the pizza.
- Cut and enjoy!
- Pro tip: if you don't have mini spring form pans, no worries! You can use one large spring form pan and just make 1 pizza, or use a pan you have.
