No Bake Tahini Chocolate Chip Cookie Dough Bars

Only have a few ingredients and little time? Whip up these bars - they are out of this world. If you love tahini, or if you’re just starting to use tahini, these are a must try!

Ingredients

Tahini Cookie Dough
  • 1 cup Bob's Paleo Flour
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 2 tablespoons unrefined coconut oil, melted
  • 1/2 cup tahini
  • 2 tablespoons vanilla extract
  • 1.75 ounces 85% chocolate bar
Chocolate Glaze
  • 75 ounces 85% chocolate bar
  • 2 tablespoons unrefined coconut oil

Instructions

Tahini Cookie Dough
  1. In a bowl, mix paleo flour, powdered sugar, salt, cinnamon and allspice together.
  2. In a separate bowl, melt coconut oil. 
  3. Add tahini and vanilla to melted coconut oil. Mix until well incorporated. 
  4. Add the wet mixture to the dry mixture and stir until well incorporated. 
  5. Roughly chop the chocolate bar and add it to the dough. Mix well. 
  6. Line an 8x8 inch pan with parchment paper. 
  7. Add the dough to the pan and spread evenly. 
Chocolate Glaze
  1. Add coconut oil and chocolate to a bowl and heat in the microwave until melted, heating in 30 second increments. 
  2. Pour the chocolate mixture over the dough and spread evenly. 
  3. Place in the freezer until set, about 2 hours. 
  4. Cut and enjoy! 
  5. Pro Tip: These bars are wonderful left in the freezer.
