Prep time: 10 MinCook time: 20 MinTotal time: 30 Min
Ingredients:
Pecan Dough
- 1 stick unsalted butter, room temperature, plus additional butter for buttering the pan
- 1/4 cup + 1 tablespoon powdered sugar
- 2 tablespoons vanilla
- 1 cup + 3 tablespoons Bob's Paleo Baking Flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup chopped pecans
Pecan Crumble Topping
- 1 ounce 85% chocolate bar
- 1/2 cup chopped pecans
- 1 tablespoon powdered sugar
Instructions
Pecan Dough
- Preheat the oven to 350 degrees F.
- Place aluminum foil in an 8x8 inch pan so it goes over the edges. This will make it easier to get the bars out of the pan.
- Butter the foil in the 8x8-inch pan well.
- Mix the unsalted butter and powdered sugar together until well incorporated.
- Mix-in the vanilla.
- Add the paleo flour, baking powder and baking soda. Mix well.
- Add the pecans and mix until well combined.
- Spread the batter evenly into the pan.
- Bake for 20-25 minutes, or until golden brown.
- Let cool completely before putting on the topping.
Pecan Crumble Topping
- Add the pecans to a food processor and pulse until the pecans turn into a crumble.
- Pour the crumble into a bowl.
- Add the powdered sugar and mix well.
- Once the bars are cooled, lift them out using the aluminum foil.
- Cut the bars into 16 pieces.
- Chop the chocolate bar, roughly. Place 1 small square of chocolate aside.
- In a microwave safe bowl, add the chocolate and melt until liquid. Microwave the chocolate in intervals of 30 seconds. After every 30 seconds, stir the chocolate until all chocolate is melted.
- Once melted, add the square of chocolate you placed aside and stir the chocolate until the square is melted. This will prevent the chocolate from burning.
- Using a spoon, drizzle the chocolate along all of the bars.
- Lightly sprinkle the pecan topping onto the top of the bars.
- Enjoy!
