Paleo Pecan Bars

Are you in need of another Thanksgiving dessert but don’t want to spend a ton of time making it? Well you’re in luck! These bars are fast, simple and absolutely delightful. The crunch of pecan and drizzle of chocolate make this dessert the perfect addition to any holiday celebration.

Not to mention, they are low in carbs and sugar. They are the perfect dessert to wow your family and lead them to believe you spent hours making them. Don’t worry, your secret is safe with me!

Paleo Pecan Bars

Ingredients:

Pecan Dough
  • 1 stick unsalted butter, room temperature, plus additional butter for buttering the pan
  • 1/4 cup + 1 tablespoon powdered sugar
  • 2 tablespoons vanilla
  • 1 cup + 3 tablespoons Bob's Paleo Baking Flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup chopped pecans
Pecan Crumble Topping
  • 1 ounce 85% chocolate bar 
  • 1/2 cup chopped pecans
  • 1 tablespoon powdered sugar 

Instructions

Pecan Dough
  1. Preheat the oven to 350 degrees F.
  2. Place aluminum foil in an 8x8 inch pan so it goes over the edges. This will make it easier to get the bars out of the pan. 
  3. Butter the foil in the 8x8-inch pan well. 
  4. Mix the unsalted butter and powdered sugar together until well incorporated.
  5. Mix-in the vanilla.
  6. Add the paleo flour, baking powder and baking soda. Mix well.
  7. Add the pecans and mix until well combined.
  8. Spread the batter evenly into the pan. 
  9. Bake for 20-25 minutes, or until golden brown. 
  10. Let cool completely before putting on the topping. 
Pecan Crumble Topping
  1. Add the pecans to a food processor and pulse until the pecans turn into a crumble. 
  2. Pour the crumble into a bowl. 
  3. Add the powdered sugar and mix well. 
  4. Once the bars are cooled, lift them out using the aluminum foil. 
  5. Cut the bars into 16 pieces. 
  6. Chop the chocolate bar, roughly. Place 1 small square of chocolate aside. 
  7. In a microwave safe bowl, add the chocolate and melt until liquid. Microwave the chocolate in intervals of 30 seconds. After every 30 seconds, stir the chocolate until all chocolate is melted. 
  8. Once melted, add the square of chocolate you placed aside and stir the chocolate until the square is melted. This will prevent the chocolate from burning. 
  9. Using a spoon, drizzle the chocolate along all of the bars. 
  10. Lightly sprinkle the pecan topping onto the top of the bars. 
  11. Enjoy!
