Scrumptious Peanut Butter Cookies

Ingredients:
- 1/2 cup unsalted butter
- 1 egg
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla
- 1 cup smooth peanut butter
- 1 1/2 cups chickpea (garbanzo bean) flour
- 2 teaspoons Ceylon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Instructions:
- Preheat the oven to 375 degrees F.
- Mix together unsalted butter, egg, brown sugar and vanilla until well incorporated.
- Add peanut butter to the mixture and mix well.
- In a separate bowl, mix together chickpea flour, cinnamon, salt and baking soda.
- Add the dry mixture to the wet mixture and mix well.
- Line a baking sheet with parchment paper.
- Roll the dough into 1/4-inch balls. Place on baking sheet and lightly press down on the cookie using a fork. This makes about 32 cookies.
- Bake the peanut butter cookies at 375 degrees F for 8 minutes.
