Scrumptious Peanut Butter Cookies

These cookies pack a punch - they are not only peanut buttery delicious, but full of protein and fiber and low in sugar. Each cookie packs about 2.3 grams of fiber, 3.3 grams of protein, only 5.4 grams net carbs and 3.4 grams of sugar.

The average peanut butter cookie tends to have less than 1 gram of fiber, less than 2 grams of protein, at least 17 grams of net carbs and at least 10 grams of sugar.

Chickpea flour (also referred to as garbanzo bean flour) is one of my favorite flours to work with. It is made from ground chickpeas and is nutritious, gluten free and extremely affordable. A quarter cup of chickpea flour has about 10 grams of net carbs, 8 grams of fiber and 7 grams of protein. For perspective, a quarter cup of white flour contains about 23 grams of net carbs, less than 1 gram of fiber and about 3 grams of protein.

This healthier option does not mean lack of flavor, nor enjoyment! It simply helps to provide your body with more nutrient dense ingredients. A simple swap can make all the difference.

Ingredients:

  • 1/2 cup unsalted butter 
  • 1 egg 
  • 1/2 cup brown sugar 
  • 1/2 teaspoon vanilla
  • 1 cup smooth peanut butter
  • 1 1/2 cups chickpea (garbanzo bean) flour
  • 2 teaspoons Ceylon cinnamon 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon baking soda 

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. Mix together unsalted butter, egg, brown sugar and vanilla until well incorporated.  
  3. Add peanut butter to the mixture and mix well.  
  4. In a separate bowl, mix together chickpea flour, cinnamon, salt and baking soda.  
  5. Add the dry mixture to the wet mixture and mix well. 
  6. Line a baking sheet with parchment paper.  
  7. Roll the dough into 1/4-inch balls. Place on baking sheet and lightly press down on the cookie using a fork. This makes about 32 cookies. 
  8. Bake the peanut butter cookies at 375 degrees F for 8 minutes.  
  9. Enjoy!  
  10. Pro Tip: If you would like the cookies sweeter, add chocolate chips, or your favorite mix-in!
