Raw Beet and Feta Salad

Beetroots are an excellent source of fiber, folic acid, manganese and potassium. Betacyanin gives beets a rich pink/purple hue. Research suggests betacyanin may be a helpful player to promote detoxification and act as an anti-cancer agent.

Raw Beet and Feta Salad

Ingredients:

  • 1 cup quinoa, cooked 
  • 1/2 red onion, diced
  • 3 raw beets, peeled and diced
  • 5 raw radishes, diced
  • 1 cup feta, crumbled 
  • 1/4 cup sunflower seeds
  • 1/4 cup parsley, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder 
  • 1 tablespoon sriracha (optional)

Instructions:

  1. Cook quinoa according to package instructions. When finished cooking, set aside to let it cool. 
  2. While the quinoa is cooking, chop the red onion, raw beets, radishes and parsley. Add chopped ingredients to a bowl. 
  3. Add the crumbled feta, sunflower seeds, black pepper, salt, onion powder and garlic powder  to the chopped veggie mixture and mix well.
  4. When the quinoa is cool, add the quinoa and mix until well incorporated. 
  5. To finish, add in the olive oil and sriracha and mix. 
  6. Garnish with parsley. 
  7. Enjoy!
