Raw Beet and Feta Salad

Ingredients:
- 1 cup quinoa, cooked
- 1/2 red onion, diced
- 3 raw beets, peeled and diced
- 5 raw radishes, diced
- 1 cup feta, crumbled
- 1/4 cup sunflower seeds
- 1/4 cup parsley, finely chopped
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon sriracha (optional)
Instructions:
- Cook quinoa according to package instructions. When finished cooking, set aside to let it cool.
- While the quinoa is cooking, chop the red onion, raw beets, radishes and parsley. Add chopped ingredients to a bowl.
- Add the crumbled feta, sunflower seeds, black pepper, salt, onion powder and garlic powder to the chopped veggie mixture and mix well.
- When the quinoa is cool, add the quinoa and mix until well incorporated.
- To finish, add in the olive oil and sriracha and mix.
- Garnish with parsley.
- Enjoy!
