Rosemary Garlic Salsify

Ingredients:

  • 2 salsify 
  • Juice of 1 lemon 
  • 4 tablespoons unsalted butter 
  • 3 cloves garlic, minced 
  • 1 tablespoon rosemary, minced 
  • Dash of salt and pepper 

Instructions:

  1. Boil a pot of water. 
  2. Meanwhile, fill another large bowl with water and add the juice of 1 lemon.
  3. Peel the salsify and immediately add them to the water with lemon juice. This will prevent the salsify from browning. 
  4. Once the salsify have sat in the lemon water for a few seconds, take them out and cut them into 1/4-inch pieces. Once cut, add the pieces back to the lemon water to maintain their color until the pot of water is boiling. 
  5. Once the water is boiling, add the salsify. Cook until tender (about 4-7 minutes). 
  6. Meanwhile, chop the garlic cloves and rosemary finely. 
  7. Heat 2 of the tablespoons of butter in a pan on medium-low heat. 
  8. Add the chopped garlic to the butter and let the garlic sauté for 20 seconds. 
  9. Once the salsify are tender, remove them from the water with a slotted spoon and let the water drain. Add the salsify to the pan with the butter and garlic. Cook for 5 minutes to incorporate the butter and garlic flavors. 
  10. Add the remaining 2 tablespoons of butter, chopped rosemary, a crack of pepper and a dash of salt. Cook until the garlic is crispy and salsify are lightly brown (about 3 minutes).
