Rosemary Garlic Salsify

Ingredients:
- 2 salsify
- Juice of 1 lemon
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon rosemary, minced
- Dash of salt and pepper
Instructions:
- Boil a pot of water.
- Meanwhile, fill another large bowl with water and add the juice of 1 lemon.
- Peel the salsify and immediately add them to the water with lemon juice. This will prevent the salsify from browning.
- Once the salsify have sat in the lemon water for a few seconds, take them out and cut them into 1/4-inch pieces. Once cut, add the pieces back to the lemon water to maintain their color until the pot of water is boiling.
- Once the water is boiling, add the salsify. Cook until tender (about 4-7 minutes).
- Meanwhile, chop the garlic cloves and rosemary finely.
- Heat 2 of the tablespoons of butter in a pan on medium-low heat.
- Add the chopped garlic to the butter and let the garlic sauté for 20 seconds.
- Once the salsify are tender, remove them from the water with a slotted spoon and let the water drain. Add the salsify to the pan with the butter and garlic. Cook for 5 minutes to incorporate the butter and garlic flavors.
- Add the remaining 2 tablespoons of butter, chopped rosemary, a crack of pepper and a dash of salt. Cook until the garlic is crispy and salsify are lightly brown (about 3 minutes).
