Seedy Crackers

Ingredients:
- 1 cup rolled oats
- 1/2 cup pumpkin seeds, roasted and lightly salted
- 1/2 cup peanuts, roasted and lightly salted, chopped finely
- 4 tablespoons chia seeds
- 1 tablespoon poppy seeds
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 2 tablespoons coconut oil, melted
- 3/4 cup water
Instructions:
- Preheat the oven to 375 degrees.
- In a bowl, mix together oats, pumpkin seeds, chopped peanuts, chia seeds, poppy seeds, cayenne pepper and salt.
- Melt 2 tablespoons of coconut oil and add it to the water. Mix and add to the oat mixture.
- Mix thoroughly. Let the mixture sit for 15 minutes (this will allow the liquid to absorb and cause the chia seeds to swell).
- Line a baking sheet with parchment paper.
- Scoop the mixture into the middle of the baking sheet and flatten into a circle with your hands. Flatten until about 1/8-inch thick.
- Place in oven for 40-45 minutes, or until golden brown and crispy.
- Let cool. When cool, break off into pieces to make crackers.
