Seedy Crackers

Rolled oats, pumpkin seeds and peanuts make these seedy crackers special and unlike any other.

Pumpkin seeds are rich in vitamin A, B1 (thiamin), B2 (riboflavin), B3 (niacin), magnesium, phosphorous, iron, zinc, copper and manganese. They also include a beneficial amount of monounsaturated fats and phytosterols (plant sterols, similar to cholesterol molecules), specifically beta-sitosterol. Beta-sitosterol has been suggested to be beneficial for prostate conditions, especially improving symptoms. Research suggests pumpkin seeds may also have a hypoglycemic effect (reduce blood sugar) and possibly improve HDL cholesterol (the ‘good’ cholesterol).

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup pumpkin seeds, roasted and lightly salted 
  • 1/2 cup peanuts, roasted and lightly salted, chopped finely 
  • 4 tablespoons chia seeds 
  • 1 tablespoon poppy seeds 
  • 1/2 teaspoon cayenne pepper 
  • 1/2 teaspoon salt
  • 2 tablespoons coconut oil, melted 
  • 3/4 cup water 

Instructions:

  1. Preheat the oven to 375 degrees. 
  2. In a bowl, mix together oats, pumpkin seeds, chopped peanuts, chia seeds, poppy seeds, cayenne pepper and salt.  
  3. Melt 2 tablespoons of coconut oil and add it to the water. Mix and add to the oat mixture. 
  4. Mix thoroughly. Let the mixture sit for 15 minutes (this will allow the liquid to absorb and cause the chia seeds to swell). 
  5. Line a baking sheet with parchment paper. 
  6. Scoop the mixture into the middle of the baking sheet and flatten into a circle with your hands. Flatten until about 1/8-inch thick. 
  7. Place in oven for 40-45 minutes, or until golden brown and crispy. 
  8. Let cool. When cool, break off into pieces to make crackers. 
  9. Enjoy!
