Sweet Potato Gnocchi

Sweet Potato Gnocchi

Ingredients:

  • 3 sweet potatoes, peeled 
  • 2 1/2 cups all-purpose flour
  • 1 egg 
  • 1 teaspoon salt
  • 1/2 teaspoon pepper 
  • 1/4 teaspoon nutmeg 
  • 2 tablespoons unsalted butter 
  • 2 tablespoons maple syrup 
  • Chopped parsley or basil for garnish 

Instructions:

  1. Peel sweet potatoes and cut into 1-inch cubes. 
  2. Bring a large pot of water to a boil. Once the water is boiling, add a pinch of salt.
  3. Toss in the sweet potatoes and cook until soft, about 20-25 minutes. Transfer the sweet potatoes to a bowl and mash.  Once mashed, set aside and let them cool completely. 
  4. In the meantime, whisk the egg, salt, pepper and nutmeg in a small bowl. 
  5. Clean a work surface and lightly flour it. 
  6. Once the sweet potatoes are cool, place them on the lightly floured surface. Form the sweet potatoes into a circle and create a well in the middle. Add the egg mixture to the well and work together with your hands. 
  7. Once mixed, begin to add the flour to the mixture 1/2 cup at a time. The mixture will be sticky. However, continue to add flour and knead until less sticky (about 2 1/2 cups). Keep in mind, the more flour you add and longer you knead, the tougher the dough will be. 
  8. Bring another pot of water to a boil. 
  9. Add some more flour to the surface and your hands.
  10. Cut the dough into 6 equal parts. Using your hands, roll the dough into a log, about 1/2 inch thick. Cut the log into 1/4 inch wide pieces. 
  11. Using a fork, press down lightly on each 1/4 inch piece (on both sides) to create a fork imprint. Place the prepared gnocchi on a plate until ready to cook. 
  12. Melt 2 tablespoons of butter in a pan, on low-medium heat. 
  13. When the water is boiling, add a pinch of salt. Add the gnocchi to the boiling water and cook. They will float to the top of the water after about 1-2 minutes. Scoop the gnocchi out with a slotted spoon and add them to the pan of melted butter. 
  14. On low-medium heat, cook the gnocchi in the butter until the gnocchi are lightly browned (about 5-7 minutes). Toss constantly. 
  15. When the gnocchi are almost ready, add one to two tablespoons of maple syrup, a dash of salt and pepper and toss. 
  16. Plate the gnocchi and garnish with parsley or basil.
