The Most Delicious Baked Falafel

Ingredients:
- 1 bunch of cilantro leaves (or parsley leaves)
- 1/2 yellow onion, roughly chopped
- 4 cloves garlic
- 1 shallot, roughly chopped
- 1 tablespoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1, 13.5 oz can chickpeas
- 4 tablespoons tahini paste
- 3/4 cup breadcrumbs
Instructions:
- Preheat the oven to 400 degrees F.
- Add the cilantro leaves, onion, garlic, shallot, cumin, chili powder, salt and pepper to a food processor and pulse until roughly chopped.
- Add the chickpeas and tahini paste and pulse until well incorporated but still a little chunky. Make sure you don't pulse too much since you don't want a paste of falafel.
- Transfer the chickpea mixture to a large bowl. Add the breadcrumbs and mix until well incorporated. If the mixture feels dry, add a little more tahini paste or olive oil.
- Form into 1.5 - 2 inch patties. Makes about 13 patties total.
- Oil a baking sheet and place the patties on the sheet.
- Bake at 400 degrees F for 15 minutes. After 15 minutes, flip the patties and cook for 5-10 minutes more, or until golden brown and crispy.
- Serve the falafel with your favorite dipping sauce and enjoy!
