The Most Delicious Baked Falafel

Chickpeas (also called garbanzo beans) are the star of falafel. Chickpeas originated in Turkey. Today, India and Pakistan grow and provide more than 80% of chickpeas around the world. Chickpeas are an excellent source of fiber and protein, especially for those who follow a vegetarian diet. When chickpeas are mixed with a grain, such as with brown rice, a complete protein is created. This recipe is perfect because it combines breadcrumbs with chickpeas - creating a complete protein.

Not to mention, chickpeas are rich in vitamin B6 (also known as pyridoxine). In the body, B6 is important for protein and enzyme metabolism, red blood cell production, nerve and muscle cell regulation, immune function, B12 absorption and more.

The Most Delicious Baked Falafel

Ingredients:

  • 1 bunch of cilantro leaves (or parsley leaves)
  • 1/2 yellow onion, roughly chopped 
  • 4 cloves garlic
  • 1 shallot, roughly chopped 
  • 1 tablespoon cumin 
  • 1 teaspoon chili powder 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon pepper 
  • 1, 13.5 oz can chickpeas  
  • 4 tablespoons tahini paste 
  • 3/4 cup breadcrumbs 

Instructions:

  1. Preheat the oven to 400 degrees F. 
  2. Add the cilantro leaves, onion, garlic, shallot, cumin, chili powder, salt and pepper to a food processor and pulse until roughly chopped. 
  3. Add the chickpeas and tahini paste and pulse until well incorporated but still a little chunky. Make sure you don't pulse too much since you don't want a paste of falafel.
  4. Transfer the chickpea mixture to a large bowl.  Add the breadcrumbs and mix until well incorporated. If the mixture feels dry, add a little more tahini paste or olive oil. 
  5. Form into 1.5 - 2 inch patties. Makes about 13 patties total.  
  6. Oil a baking sheet and place the patties on the sheet. 
  7. Bake at 400 degrees F for 15 minutes. After 15 minutes, flip the patties and cook for 5-10 minutes more, or until golden brown and crispy. 
  8. Serve the falafel with your favorite dipping sauce and enjoy!
