The Most Delightful Red Wine Haddock

Ingredients
- 2 tablespoons olive oil
- 1/4 red onion, diced
- 1 large carrot, diced
- 3 garlic cloves, minced
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1 teaspoon fresh thyme, minced
- 2 fresh thyme sprigs
- 1/2 cup of your favorite red wine
- 1 raw haddock fillet
- 2 tablespoons unsalted butter
Instructions
- Lightly salt and pepper raw haddock fillet. Set aside.
- In a medium sauté pan, on medium-low heat, add 2 tablespoons of olive oil.
- Add diced onion and carrot mixture and sauté until onions begin to caramelize, about 15-20 minutes.
- Add minced garlic to the mixture and sauté for 1 minute, until the garlic becomes fragrant.
- Add salt, pepper, garlic salt and onion powder and mix. Add fresh thyme and 2 thyme sprigs and mix. Cook for 2 minutes.
- Add 1/4 cup red wine, or enough to coat the bottom of the sauté pan.
- Add the raw haddock on top of the veggies and put some of the mixture on top of the entire haddock fillet.
- Cover with a lid and and cook until the haddock is cooked through, about 7-10 minutes depending on thickness.
- Take the haddock out of the pan and put it on a plate.
- Add 2 tablespoons of butter and the other 1/4 cup of red wine (or more if there isn't a lot of liquid left), and cook the mixture for 1-2 minutes, or until reduced.
- Take out the thyme sprigs.
- Pour the veggie mixture on top of the haddock and enjoy!
