The Most Delightful Red Wine Haddock

This haddock is amazingly delicious and surprisingly easy. Haddock is particularly rich in magnesium, selenium, phosphorous, niacin, pyridoxine and B12. It is a lean fish that is a wonderful addition to your weekly routine.

Many fish provide a generous amount of omega-3 fatty acids. Although fattier fish supply a higher concentration of omega-3 fatty acids, haddock does contain some. Research suggests omega-3 fatty acids may have a beneficial effect on heart health.

The Most Delightful Red Wine Haddock

Ingredients

  • 2 tablespoons olive oil
  • 1/4 red onion, diced
  • 1 large carrot, diced
  • 3 garlic cloves, minced 
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic salt 
  • 1/2 teaspoon onion powder 
  • 1 teaspoon fresh thyme, minced
  • 2 fresh thyme sprigs 
  • 1/2 cup of your favorite red wine  
  • 1 raw haddock fillet
  • 2 tablespoons unsalted butter 

Instructions

  1. Lightly salt and pepper raw haddock fillet. Set aside. 
  2. In a medium sauté pan, on medium-low heat, add 2 tablespoons of olive oil. 
  3. Add diced onion and carrot mixture and sauté until onions begin to caramelize, about 15-20 minutes.
  4. Add minced garlic to the mixture and sauté for 1 minute, until the garlic becomes fragrant.
  5. Add salt, pepper, garlic salt and onion powder and mix. Add fresh thyme and 2 thyme sprigs and mix. Cook for 2 minutes.
  6. Add 1/4 cup red wine, or enough to coat the bottom of the sauté pan. 
  7. Add the raw haddock on top of the veggies and put some of the mixture on top of the entire haddock fillet. 
  8. Cover with a lid and and cook until the haddock is cooked through, about 7-10 minutes depending on thickness. 
  9. Take the haddock out of the pan and put it on a plate. 
  10. Add 2 tablespoons of butter and the other 1/4 cup of red wine (or more if there isn't a lot of liquid left), and cook the mixture for 1-2 minutes, or until reduced. 
  11. Take out the thyme sprigs. 
  12. Pour the veggie mixture on top of the haddock and enjoy!
